Rustic Peach Salsa



  • 1lb tomato diced 
  • 2 jalapeños (leave seeds in for extra heat)
  • 1 bell pepper 
  • 1 medium onion
  • 1.5lbs of peaches 
  • .5 bunch of cilantro
  • 1 large lime 
  • 1.5 tsp salt 
  • 1/4 tsp black pepper 


  1. Wash all produce. 
  2. Start with tomato and cut out core, dice medium to small depending on preference. 
  3. Chop peppers starting with the sweetest, take all seeds out of ribs.  With the spicy peppers you may leave seeds in for extra heat.
  4. Slice peaches in half and then again, dice into small pieces.
  5. Dice onion into small pieces and add.
  6. Take the big steam out of the cilantro and finely dice the rest, add to mixture.
  7. Take the lime and roll it on a hard surface applying pressure then cut open and squeeze over the mixture. 
  8. Add salt and pepper to taste .
  9. Serve right away or chill for an hour. 
  10. This recipe will last in the fridge for up to 7 days.
